Lettuce Wraps

Over our Christmas vacation my mom brought home a recipe from work that we were going to try. We made this recipe on our very last day of our vacation. It turned out yummy! These were great lettuce wraps and we made it as a family.

LETTUCE WRAPS
Enough lettuce for 16 lettuce pieces (wraps)
1 lb boneless skinless chicken breasts
1 large onion-chopped
2 Tbs. minced garlic
1 T. soy sauce
2 tsp. minced fresh ginger
1/c cup hoisin sauce
1 Tbs. apple cider vinegar
2 tsp. sweet chili pepper sauce
1 can sliced water chestnuts--drained finely chopped
1 bunch green onion--thinly sliced
2 tsp. Asian sesame oil

Direction: Rinse lettuce leaves, keeping them whole. Set aside to drain. Season chicken breast with salt, pepper, and garlic powder. cook in olive oil in large skillet over medium heat until fully cooked turning once. Remove from skillet and chop chicken into small pieces. Saute onion and garlic in a little oil until onion is softened. Add chopped chicken, soy sauce, hoisin sauce, ginger, vinegar and chili sauce. Add water chestnuts and green onions. Cook until onions begin to wilt, about 2 minutes. Remove from heat. Stir in sesame oil. Arrange lettuce leaves on the outer edge of a platter. Spoon meat mixture in center. Allow diners to spoon meat mixture into lettuce leaves and eat like a taco.
